1. The main raw materials used are pierced fruit kernels, sliced (including kernels), and mashed fruits

3. Beating pulp
Purpose: Crush the fruit, separate the core, and obtain a pulp
(1) The fruit water ratio of the core is 3:1, and the fruit water ratio of the sliced fruit is 1:0.5
(2) The sugar content requirement for fruit pulp is 15 degrees
4. Boiling slurry
Purpose: To thicken the slurry
(1) Keep stirring to avoid burning the pot
(2) The sugar content of the boiled paste reaches over 20 degrees Celsius
(3) Sensory analysis shows that when pouring down with a spoon, it is not in a linear shape, but rather in clumps
5. Allocation
Purpose: To mix flavors
(1) Turn off the steam before adding ingredients
(2) Pectin needs to be added first, mixed with sugar, and then added
(3) Then add white sugar and other ingredients, and citric acid should be added before serving
(4) The blending speed should be fast to avoid excessive conversion sugar, which should be below 23%
6. Scraper blade
(1) The scraping speed should be fast to avoid prolonged storage of the slurry in the pot, which may cause an increase in sugar conversion
(2) The thickness of the scraper should be controlled at 0.3— 0.5cm
7. Drying
Purpose: To evaporate water
(1) The drying time should be determined according to the actual situation, generally ranging from 6 to 7.5 hours.
(2) The temperature of each drying section is 70 ℃
(3) During the drying process, it is divided into one section: entering the first compartment, temperature 70 ℃, humidity 20%, automatic dehumidification, time 1 hour
Second section: Enter the second compartment, temperature 70 ℃, humidity 16%, automatic dehumidification, time 1 hour
Third section: Enter the first compartment, turn off the machine, and let it sit for one hour
Fourth section: One compartment drying, temperature 70 ℃, humidity 12%, automatic dehumidification, time 45 minutes
Fifth section: Enter the second compartment, temperature 70 ℃, humidity 12%, automatic dehumidification, time 45 minutes
Section 6: Enter the first compartment, turn off the machine, and let it sit for 1 hour and 30 minutes
Seventh section: One compartment, temperature 70 ℃, humidity 10%, automatic dehumidification, drying for 30 minutes
Section 8: Enter the second compartment, turn off the machine, and let it sit for 60 minutes
Section 9: In the second compartment, at a temperature of 70 ℃ and a humidity of 10%, without the need for dehumidification, dry for 30 minutes
(4) During the drying process, it is important to regularly observe changes in temperature and humidity, especially temperature, in order to determine if the solenoid valve is functioning properly and promptly prevent temperatures from being too high or too low.
8. Start the film
(1) The starting speed should be fast to avoid poor starting due to cooling
(2) Try to slice the entire piece as much as possible to reduce scraps
(3) When it is difficult to pick up the pieces, a reasonable picking plan should be developed based on the packaging size to reduce scraps.
9. Develop a good cutting plan for packaging to minimize the production of scraps caused by cutting.
